Champagne was invented by the famed Benedictine monk Dom Pérignon, in 1668. Champagne is exclusively produced in the Champagne wine region of France under the strict rules of the appellation that demand specific vineyard practices, production methods, and sourcing of grapes exclusively from designated places within the Champagne region. Champagne is derived exclusively from varietals such as Pinot Noir, Pinot Meunier, and Chardonnay. Specific grape-pressing methods and secondary fermentation of the wine in the bottle cause carbonation to occur, resulting in the wine's medium-sized bubbles. Champagne is a painful labor of love, requiring patience and multiple steps. Wineries and négociant houses (such as Roederer or Moet Hennessey) are permitted to also use Pinot Blanc, Arbne, and Petit Meslier in the vinification process, however, these varietals are typically used in very tiny amounts, if used at all.
Champagne is well associated with royalty dating back to the 17th, 18th, and 19th centuries. For example, in 1876, Louis Roederer was contacted by the Czar Alexander II, whose choice of wine at the Imperial Palace was no other than Cristal, produced by the legendary winemakers at Roederer. Royalty, world figures, and celebrities commonly associate champagne with the celebration of life's best events, thus creating the universal celebratory theme of popping champagne for special occasions.
